- 12 lasagna noodles
- 2 cups of ricotta cheese
- 3 cups of shredded mozzarella cheese
- 1 cup of grated Parmesan cheese
- 2 cups of marinara sauce
- 2 cups of spinach, chopped
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Cook Noodles: Boil the lasagna noodles according to package instructions. Drain and set aside.
Sauté Vegetables: Heat olive oil over medium heat in a large skillet. Add onion and garlic, sautéing until softened. Add zucchini, squash, bell pepper, and spinach. Cook until tender, seasoning with oregano, basil, salt, and pepper.
Layer Lasagna: Preheat the oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of the baking dish. Layer with lasagna noodles, followed by a spread of ricotta cheese, sautéed vegetables, mozzarella cheese, and more marinara sauce. Repeat the layers, ending with a generous Parmesan and Mozzarella cheese topping.
Bake: Cover the lasagna with foil and bake for 25 minutes. Then, remove the foil and bake for 15 minutes or until the cheese is golden and bubbly.
Serve: Allow the lasagna to cool for a few minutes before cutting into slices. Garnish with fresh basil if desired.
