Egg roll cookies, also known as barquillo, are a tasty treat that’s crispy on the outside and light on the inside. These cookies are fun to make and can be flavored in many different ways.
Here’s a simple guide to help you create your egg roll cookies at home.
You will need the following ingredients:
• 2/3 cup all-purpose flour
• 2 tablespoons cornstarch
• 1/3 cup granulated sugar
• 1/3 cup unsalted butter (melted)
• 5 large eggs
• 1 teaspoon vanilla extract
• 2 tablespoons milk powder
• 1/4 teaspoon baking soda
• Pinch of salt
Optional Add-ins:
• 2 tablespoons ground black sesame seeds
• 2 tablespoons shredded coconut
• 2 tablespoons dried rose petals
• 2 tablespoons dried osmanthus flowers
To make these cookies, you will need:
• An electric griddle or a large skillet
• A large spatula (preferably non-stick)
• Parchment paper
• A mixing bowl and whisk
Step 1: Make the Batter
1. In a mixing bowl, crack the eggs and add the sugar, milk powder, and vanilla extract. Whisk them together until the sugar dissolves.
2. Slowly add the all-purpose flour, cornstarch, baking soda, and salt to the egg mixture. Stir until everything is well mixed.
3. Fold in the melted butter until the batter is smooth. If you want to add any optional flavors like sesame seeds or coconut, mix them in now.
Step 2: Cook the Cookies
1. Preheat your electric griddle or skillet to medium heat (about 350°F or 175°C).
2. Place a piece of parchment paper on the cooking surface to prevent sticking.
3. Pour about one tablespoon of batter onto the hot surface and cover it with another piece of parchment paper.
4. Use your spatula to press down gently on the batter and spread it into a thin layer.
5. Cook for about 4–5 minutes until the edges start to lift and look pale. Don’t flip it over; just let it cook on one side.
Step 3: Roll the Cookies
1. Once cooked, carefully lift the cookie with your spatula while it is still warm.
2. Roll it into a cylinder shape right away; this will help keep its shape as it cools.
3. Place the rolled cookies on a wire rack to cool completely.
Egg roll cookies can be enjoyed plain or served with coffee or tea. They also taste great with ice cream! Feel free to experiment with different flavors and toppings to make them your own. Happy baking!
