- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 1 vanilla bean (or 2 teaspoons pure vanilla extract)
- Pinch of salt
- 4 large egg yolks
Prepare the Vanilla Base: In a medium saucepan, combine the heavy cream, milk, and half of the sugar. If using a vanilla bean, split it open and scrape out the seeds, adding both seeds and pod to the mixture. Heat over medium heat until it starts to simmer. Remove from heat and allow the vanilla to steep for 15-20 minutes.
Whisk the Egg Yolks: In a separate bowl, whisk the egg yolks with the remaining sugar until pale and slightly thickened.
Temper the Eggs: Slowly pour the warm cream mixture into the egg yolks, whisking constantly to prevent curdling. Once combined, return the mixture to the saucepan.
Cook the Custard: Cook the mixture over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (around 170°F or 77°C). Do not let it boil.
Chill the Mixture: Remove the vanilla bean pod (if used), and strain the custard through a fine mesh sieve into a clean bowl. Stir in the vanilla extract (if not using a vanilla bean) and a pinch of salt. Cover the surface with plastic wrap and refrigerate until completely cold, at least 4 hours or overnight.
Churn the Ice Cream: Transfer the chilled custard to an ice cream maker and churn according to the manufacturer's instructions until it achieves a soft-serve texture.
Freeze Until Firm: Transfer the churned ice cream to a lidded container and freeze for at least 2 hours or until firm.
