For the Cupcakes:
• 1 ½ cups all-purpose flour
• 1 cup granulated sugar
• ⅓ cup unsweetened cocoa powder
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ¼ teaspoon salt
• ½ cup vegetable oil
• 2 large eggs
• 1 cup buttermilk
• 1 teaspoon vanilla extract
• ½ cup boiling water
For the Frosting:
• ½ cup unsalted butter, softened
• 2 cups powdered sugar
• ⅓ cup unsweetened cocoa powder
• 2 tablespoons heavy cream (or milk)
• 1 teaspoon vanilla extract
• A pinch of salt
1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
2. Mix Dry Ingredients: In a large bowl, sift the flour, sugar, cocoa powder, baking powder, baking soda, and salt together.
3. Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, eggs, buttermilk, and vanilla extract until well combined.
4. Combine Wet Ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
5. Add Boiling Water: Stir in the boiling water. The batter will be quite thin, but this is normal and will result in moist cupcakes.
6. Fill Cupcake Liners: Divide the batter evenly among the cupcake liners, filling each about ⅔ full.
7. Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
8. Prepare the Frosting: In a medium bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined. Add the heavy cream, vanilla extract, and a pinch of salt, then beat on high speed until light and fluffy.
9. Frost the Cupcakes: Once the cupcakes are completely cool, frost them with the chocolate frosting using a piping bag or a spatula.
10. Serve and Enjoy: Enjoy your homemade chocolate cupcakes with a glass of milk or your favorite beverage!
